Di-licious: Now more than cake



Blogging was the last thing on my mind for a long time.

Every year my domain renewal notice would arrive and I'd debate whether to let it all go.

I stopped for a number of reasons: I hated the so-called rules of being a better blogger. It stopped being fun. I was busy enough offline. My computer crashed. I didn't feel authentic.

I'm no longer interested in sharing lots of recipes or how I'm tackling the latest parenting phase.

My Instagram feed pretty much sums up where I'm at these days.  Sewing more. Making sourdough bread. Walking the dog. Making marmalade. Baking a bit. Getting into the garden.

I have missed taking photos with my DSLR. I missed writing.

So Di-licious 2017 onward is going to look and sound a lot different.

It's more about who I am. A personal blog documenting what I'm doing. What's making me happy.

I'm also going to close down the Facebook Page.

Salty Sweet Peanut Cookies

When I was a teenager I loved dipping french-fries into the chocolate sauce of a McDonalds sundae. My friends were horrified. Unbeknownst to me I'd had my first gastronomic epiphany: pairing salty and sweet. I’ll admit I’m perplexed by the American obsession with a PBJ (sorry, I just am) but a Snickers bar – I’m all for that. And one of my most loved cupcake creations is a rich chocolate cupcake, dressed in whipped chocolate ganache and sprinkled with sea salt flakes. So it should come as no surprise that a salty sweet peanut cookie would ring my bell. How to be a Domestic Goddess is one of my favourite cookbooks to read – I just love the way Nigella writes. Unsurprisingly, she's nominated these cookies as one of her favourites (and most addictive). They are everything they promise to be – salty and sweet with ta luscious greasiness that only vegetable shortening can give a biscuit. Cute owl cupcake toppers

Hoot Hoot!! How cute are these adorable owl cupcake toppers? I whipped these up last week for a special surprise birthday delivery for my niece. I've been making cupcakes for Hannah's birthdays for the last three years.  Its always interesting to look back at photos of earlier decorating efforts - I've come a long way.  Last year was sort of the p ièce de résistance   - the famed Golden Snitch cupcakes for her Harry Potter themed party. This year we were getting ready for our epic drive to Byron Bay for my sister's wedding , so we didn't make it to Bendigo.  So no Di-licious cupcakes for Hannah.  At least, that's what she thought!
